Rugiada del Mattino is a wine with a WOW! factor: taste it blindfolded and it will be indistinguishable from a red. The ancient grape used in this wine went almost extinct, but its fruit produces wines like no other.

‘Rugiada del Mattino’ means ‘Dewdrops of the Morning’, the name comes from the sapid minerality of the wine that almost tastes like dewdrops in the morning.

  • Paolo's organic vineyard unique his land presents a very articulated terrain, with significant variations both in soil composition and in slopes and exposures, as well as underground aquifers. Layers of clay and fossil limestone alternate, and are very important for the vitality of the body of the wines, while the presence of chalk and sandstone contribute to their elegance and longevity.

    The rows of vines in the organic vineyard follow the sloping plane of the hills and expose the vines mainly towards the south/south-east, offering optimal exposure to the sun and encouraging ventilation.
Salty air currents from the nearby Mediterranean bring rainfall from the sea and groundwater, completing this unique ecosystem.

    In the Cellar: The grapes are selected and harvested by hand and macerate on the skins for 2 days. Fermentation starts with indigenous yeasts, 12 months on the noble lees in inox vats.
